Our stay in the laid-back holiday town of Toukley, NSW, gifted us with some of the most spectacular sunsets I've ever witnessed. Night after night, we watched in awe as the sky transformed into the exact warm, fiery hues of this carnelian gemstone - oranges and reds drifting through the clouds like liquid fire. Toukley stretches beautifully across the region's north, framed by the peaceful waters of Tuggerah Lake, Budgewoi Lake, and Cabbage Tree Harbour.
